Roselle Afternoon Tea

The past year has been one of the most challenging of our lives. The fear of the unknown, the distance from those you love, and the loneliness of isolation can be a real downer.

We have found refuge in our kitchen. The quiet time has forced to to refocus on our work. It has launched one of the most creative periods in the history of Roselle and our professional lives. We have lots of fun and exciting products coming this year, so stay tuned!

The past year, we have found comfort in our kitchen exploring what it means to say “dessert makes you happy” and creating new things for you to enjoy. In some strange way, our work has been a bridge between us and the people we love and have been severed from. We are very grateful for that.

With this in mind, we are happy to announce the first-ever Roselle Afternoon High Tea set, just in time for Mother’s Day. For this unique set (which serves 2), we were inspired by a time in our lives when we were young, happy, wild and free. The year was 2011, when Bruce and I met as two struggling young cooks in Paris...

During that year, we learned to appreciate simplicity and intensity of flavour. The food that we loved to eat was never complicated and the secret to delicious food is the holy trinity of simplicity, freshness and quality. Since opening Roselle in 2015, we have always tried to be true to those principles.

The tea set includes 2 of each:

  • Housemade Boursin on Blackbird baguette: a staple meal of the struggling young cook. Cheap, cheerful and perfect for picnics by Canal St Martin. Housemade Boursin cheese, made with locally-grown herbs from at friends at Tamarack Farms, with toasted baguette slice.

  • Ham & Cheese Buckwheat Crepe Swirl: Everyday we would walk past a streetside crepe stand to get to our apartment on Rue Mathis. We would order this on our off-days when we were too lazy to cook. With locally smoked cooked ham and Swiss Gruyere cheese.

  • Smoked Salmon Sammies: Smoked salmon was served around the holidays in France and we learned to associate it with shared meals and celebration. We are purchasing ours from local favourite Kristapson’s.

  • Scones, jam and clotted cream: Not so much French as British, our tea set will include housemade plain cream scones, Earl Grey cream scones, strawberry & rose jam, clotted cream

  • Sable Breton Bites: This delectable bite is inspired by the region of Brittany, the land famous for its butter and caramel.

  • Classic Opera Cake: An homage to Dalloyau, the pastry shop founded in 1682, that invented this cake to honour the famous Opera house in Paris.

  • Infinite Vanilla Cream Puffs: inspired by our favourite master pastry chef, Pierre Herme, who highlights a single ingredient in many of his desserts

  • Orange Blossom Macarons: Our favourite bakery was Du Pain et des Idees, where the orange blossom brioche is one of our favourite breads in the world

  • Raspberry Melpa Caramels: A fun Roselle twist on Escoffier's classic dessert, Peach Melba. Our version of this iconic flavour combo includes passion fruit, hence MEL-PA! Our first-ever double-layered caramel!

  • Assorted Sloane teas: 1 black tea, 1 green tea, 1 herbal tea

Each tea set box will include a beautiful dried bloom from our friends at Linden Grove so you can set the ambiance for a blissful afternoon.

Boxes will go on pre-order Monday April 26th at 8pm right here on our website for pick-up between 11am and 3pm Sunday May 9th.
