Ontario strawberry season is like Christmas to us. We wait all year for those juicy, fragrant, gorgeous and more importantly, sweet and delicious Ontario gems. Their season is always so heartbreakingly short, but their arrival always brings us such joy. Especially as pastry chefs. Though they are perfect all on their own, but we can't help but transform them into some of our favourites. A little cream and sugar never hurts right?
We feature them on top of our signature light and marshmallow-y pavlovas. We stuff them inside sheets of our buttery hand made puff pastry sheets for millefeuille (both of these are available for our evening hours by the way). We bake them into little buttermilk cakelets...
Our most favourite way of eating strawberries definitely has to be in the form of a Fraisier. AKA that fancy French strawberry shortcake. This will be our 4th year making it.
What's our take on the classic show-stopping French cake?
We make ours with a delicate sponge that's brushed with some Grand Marnier syrup (strawberries and a bit of citrus is always welcomed), fresh cream, vanilla bean custard and of course, a lot of Ontario strawberries. It seems like every year we manage to sneak in a little extra strawberries..

Available for pick-up starting Wednesday June 26th- until the end of strawberry season.
Please note that while the cake is nut-free, we do loveeee nuts and work with a wide variety of them (pistachios, hazelnuts, almonds, pecans..), so we can never guarantee that there has been no cross-contamination.
