Roselle & Toronto’s Pastry COMMUNITY

One of the many joys of our work is that it gives us an opportunity to collaborate with other chefs who we respect and admire. These are a few of the events we've organized or participated in over the years. We hope that there will be many more chances to collaborate with our colleagues in the future.

La Grande Tablée, October 2022

We were thrilled to be the guest pastry chef for a memorable evening at Toronto’s iconic Fairmont Royal York Hotel, to celebrate and contribute to the mission of La Tablée des Chefs.

For the past 20 years, this important charitable organization founded in Quebec has been carrying out its social mission to fight against food insecurity and to develop food autonomy for young people. During this time, they have prepared and distributed over 13 million meals across Canada and developed culinary skills in over 45,000 youth through their various programs!

Our dessert was inspired by the local seasonal bounty of Southern Ontario’s fields. Chef Stephanie Duong created a special dessert that she named “La Reine d’Automne” to honour the history of the hotel and one of the most celebrated autumnal product: the mighty squash. We sourced heirloom North Georgia squash from our friends at Tamarack Farms, as well as their organically-certified maple syrup to create a stunning homage to fall time in Ontario.


The plated dessert consisted of an autumn spice cake with roasted squash, Armagnac crème anglaise, whipped buttermilk cream and topped with a disc of caramelized white chocolate and candied pumpkin seeds.

The evening was a success, with over 300 diners enjoying this wonderful dessert. Together, we helped raise almost $200,000 for a worthy cause.

Artisans assemble!

We ganged up with our beloved pastry chef friends Steven Tran @steventranchocolates, Brendan Platts @brenplatts, Lindsay Haddock @missmacaroon_bakingco, and Jill Barber @barbershoppatisserie for a special pre-holiday cookie tin on November 15th 2021. Our theme was holiday memories and each chef imbibed some of their fondest childhood cookie memories to their cookie creation. We sold 300 tins and donated 5% of proceeds to FoodShare to help them in their mission to a food system where everyone has access to affordable, fresh, nutritious food.

CAKE collaboration, Take 2
March 2021

Back by popular demand, we did another collaborative cake box with five of our pastry chef friends. We asked them to create a slice of their favourite classic cake in their own unique baking style. We sold 180 boxes online in under 20 minutes! These babies sold like “hotcakes”!

Charity Cake Box Collaboration
July 2020

Organized and hosted during the summer of the Year of The Raging Dumpster Fire (2020), we invited five of our pastry chef friends to create a "summer drinks" inspired slice of cake in their own distinctive baking style. We served over 100 patrons in a socially-distanced and safe manner and donated proceeds to Black Women in Motion, CAMH and the Trans People of Colour Project. Much love goes to Steven Tran @stran811, Brendan Platts @brenplatts, David Chow @Davidhchow, and Lindsay Haddock @missmacaroon_bakingco for helping us plan the event and contributing your time and skills so generously. Thanks to our shared efforts, we raised $10,000 total for these great causes.


Chocolates for Charity
December 2018

This event was organized by our friend and uber-talented chocolatier David Chow of David Chow Chocolates. We jammed 20 of Toronto's finest chocolatiers into a tiny 600sqft space (Roselle) and put together a seasonal chocolate box to raise money for the Toronto’s Second Harvest to help provide good food and deliver it to hungry children, adults, and seniors facing food insecurity in Toronto. Thanks to @cacaobarryofficial for providing chocolate and for @chocolat_chocolatinc in Montreal for providing the packaging making all of this all possible!

Cookie Social @ The Artisan Factory
November 2018

Hosted by Roselle at the beautiful Artisan Factory on Geary Avenue, we brought together 19 pastry chefs from across the city to create a collaborative "holiday cookie box" and had a party with live music, free ice cream, and many more prizes contributed by our friends and supporters. We raised over $8,000 for The Toronto Star Santa Claus Fund, a long-standing Toronto charity drive that helps underprivileged children receive the gift holiday cheer.

Cream Puff Social @ Roselle

During a beautiful spring evening, we hosted friends Goûter by Rodney Alleguede, Corvis: Dessertbar, Miss Macaroon Baking Co., David Chow, Cori Osborne and Shoko Chocolates. Each of us made adorable animal-themed cream puffs in any distinctive flavours.

Milk & Cookie Social @ Roselle
November 2016

Our first-ever collaboration was hosted at Roselle, we invited four of our pastry chef friends to provide cookies and cheer. Proceeds from the event were donated to SickKids Hospital in Toronto and amounted to over $800. Thank you to Royce Li (Shoko Chocolates), David Chow (David Chow Chocolates), Lindsay Haddock (Miss Macaroon Baking Co.) for participating.


Roselle x Tandem Coffee

We regularly bake a custom cookie for our friends and neighbours at Tandem Coffee: the roasted white sesame and milk chocolate cookie. Only available at their cozy shop, just a few doors down from Roselle. We highly recommend their black sesame latte while you’re there.

Roselle x Bar Ape

We collaborate regularly with our friends at Bar Ape. Some of the fun items we’ve done together in the past few years include:

  1. Bar Ape sundae with Roselle caramel sauce

  2. Roselle x Bar Ape soft serve baby: Earl Grey & Ontario Blueberry swirl

  3. Roselle x Bar Ape dipped cone: Earl Grey with a melting raspberry caramel centre and dipped in white chocolate and freeze-dried raspberries
